A pan of frying oil, a stovetop left on a little too long, a kitchen with the door closed against winter – none of it looks like a pollution event. It looks like dinner.
What the data shows
Cooking is one of the largest sources of indoor air pollution in an ordinary home, ahead of most people’s assumptions about traffic or dust. Heated oils and gas flames release a mix of fine particulate matter (PM2.5 and PM10), nitrogen dioxide, carbon monoxide, and — depending on what’s on the stove — formaldehyde and other volatile compounds. Gas stoves in particular have been linked in recent research to a meaningful share of childhood asthma cases, simply from the combustion byproducts released every time a burner is lit.
None of this is a single spike that clears in a minute. Particles settle into cabinet surfaces and fabric, and odors from spills, grease, or a slow drain can linger for days once they’ve worked into porous materials — long after the meal itself is finished.
There’s also a second, quieter source in most kitchens: not heat, but chemistry. Scented cleaning sprays, aerosol products, and even food gradually breaking down in a drain release their own gaseous emissions, unrelated to cooking but easy to mistake for it.

A range hood that recirculates air, rather than venting it outside, is doing less than it appears to — it moves the smoke around the kitchen rather than removing it.
